Perfect for adding in cubes to raw mushroom and walnut salads, excellent in flakes on hot crostoni or yellow polenta.
An interesting combination with chestnut jam, which brings out its underwood aroma, and try it grated over tagliatelle made with chestnut flour.

Half Pecorino cheeses may also differ slightly in weight.
