About the producer, Tommaso Giordana:
Tommaso Giordana is a young Maremman producer of cured meats and cold cuts. His semi-wild herd is located in Montiano, a few metres from the Maremma nature park. His pigs, a hybrid between the Cinta Senese and the Grigio del Casentino, are bred according to the most ancient traditions and with great attention to nutrition (everything they eat is produced by the farm itself. The care taken in production and the experience gained as a pork butcher allow Tommaso Giordana to produce excellent cured meats free of preservatives, GMOs and antibiotics.
