Pigeon Roe Le Follie di Carlo Giusti :
Pigeon roe is processed by hand from the extremely cured pigeon ham. The name is reminiscent of the traditional fish botargo because, by grating the ham, particular curls are obtained.
It has a pungent odour but gives the palate a fine and elegant flavour, persistent and pleasant. Strong flavours and savouriness reminiscent of the flavours and scents of the woods where pigeons are reared in total freedom in Pisa. It is a special experience that cannot be found elsewhere.

Pigeon meat, Salt, Pepper, Herbs.
The history of Le Follie di Carlo Giusti:
Carlo Giusti has been pursuing his personal project for a lifetime to promote the Valdarno Nera breed,
an ancient Chianti rooster that seemed extinct
and that instead continues to roam with regal demeanour
in his estate in Lajatico and in those of a few others, he offers unique products to the public, his follies include pigeon ham, wild pigeon chitterlings and pigeon botargo.
