Greek and Sauvignon from the vineyards of Sovana. The planting in 1995 is grown in cordon (sauvignon blanc) and double guyot (Greek) with 4800 plants per hectare.
Harvesting and manual sorting of the grapes, separate fermentation for each vine: in steel for the Sauvignon with short maceration; in steel, with prolonged stay on the skins and then in barrique for the Greco. No yeast is added. The wine matures for 12 months in barriques of second passage. It is put on the market after a few months of refinement in bottle.
It has a deep golden yellow colour, already fat in appearance and offers aromas ranging from citrus flowers to ripe white fruit and cedar wood with a fresh balsamic note at the base. Great structure and persistence. Original and very pleasant.

The wines of Sassotondo want to be an expression of their powerful and mysterious territory: the autochthonous grape varieties and an environment that is in some ways extreme, with tuff emerging everywhere, produce fine and elegant wines, naturally concentrated, savoury and spicy.
The 12 hectares of the farm are located between the towns of Sorano and Pitigliano. The area is considered altimetrically “hillside”, but it appears as a succession of high lands, interspersed with deep ravines dug into the tuff by inconstant watercourses.
The company falls in fact in the DOC Bianco di Pitigliano, Sovana and Maremma Toscana.
Sassotondo’s is an old underground cellar, completely dug into the tuff in a cliff of the farm land. In the last room, separated from the rest of the cellar by a long corridor (about 14 metres underground and 30 metres from the entrance) is the cooper, who enjoys ideal humidity and temperature conditions in a completely natural way.
