Characteristics of the variety: This olive tree was already known since ancient times and, thanks to its role as a pollinator of many other varieties, it spread rapidly throughout Tuscany. Its flowers are self-incompatible and very fertile while the fruits ripen late and in a non-contemporary way on the plant. When compared to other olive varieties, this proves to have a certain resistance to cold.
Characteristics of the oil: At the nose the oil of “white olive” is very intense and reminiscent of red fruits and geranium.
