Monocultivar Maurino Extra Virgin Olive Oil Giacomo Grassi
The Maurino is a pollinating plant that is used to fertilize many olive varieties that otherwise would not be able to fructify. It has many advantages such as that of resisting more than other varieties at low temperatures and of giving constant production over the years. It is one of the few oils that are born on our cold hills and that “marry” perfectly even with dishes based on fish. The oil is appreciated for its intense aromas that recall aromas typical of the Mediterranean, such as sage, mint and rosemary.
Characteristics of the oil:
The oil of the Maurino variety strikes for the very floral aromas that distinguish it from all other oils of the Tuscan varieties, remembers the smells of the gardens in spring and it is even more interesting that the same fresh notes are perceived in the mouth on the nose . Pleasant feeling of green tomato and the spicy of late gorge.
The oil of the Maurino variety can be further enhanced if combined with “scented” dishes such as fennel carpaccio with fresh and orange pecorino cheese, cold rice salads, and baked tomatoes.
What is a Monocultivar Olive Oil?
The extra virgin olive oil is called monocultivar when the olives from which it is extracted come from the same type of plant. In Tuscany, the most frequent and well-known are the monocultivars called: Frantoio, Leccino, Maurino, Moraiolo, Olivastra Seggianese and Olivo Bianco. as for wine, where each vine has its specific characteristics, also for olive oil, each cultivar has unique characteristics that are enhanced in extra virgin olive monocultivar olive oil.
