Isolina Bianco Di Pitigliano Superiore Sassotondo :
It consists mainly of Trebbiano, with Sauvignon and Greco. The grapes come from our vineyards in Sovana and are grown in spurred cordon and Guyot on strongly tuff soil.
The grapes are harvested and selected by hand, and vinified separately. The crushed grapes undergo maceration with the skins for about 12/24 hours. The fermentation, without added yeasts, can last for over two months, in steel tanks and at low temperature. At the end of fermentation the wine is left on the yeasts for another 2 months and then blended.
It is a deep straw yellow wine, with fresh mentholated perfumes, flowers and white fruits; dry, sapid, with good body and long persistence.

The wines of Sassotondo want to be an expression of their powerful and mysterious territory: the autochthonous grape varieties and an environment that is in some ways extreme, with tuff emerging everywhere, produce fine and elegant wines, naturally concentrated, savoury and spicy.
The 12 hectares of the farm are located between the towns of Sorano and Pitigliano. The area is considered altimetrically “hillside”, but it appears as a succession of high lands, interspersed with deep ravines dug into the tuff by inconstant watercourses.
The company falls in fact in the DOC Bianco di Pitigliano, Sovana and Maremma Toscana.
Sassotondo’s is an old underground cellar, completely dug into the tuff in a cliff of the farm land. In the last room, separated from the rest of the cellar by a long corridor (about 14 metres underground and 30 metres from the entrance) is the cooper, who enjoys ideal humidity and temperature conditions in a completely natural way.
