VINIFICATION: DESTEMMING AND PRESSING, 12 DAYS OF ALCOHOLIC FERMENTATION IN STEEL AT LOW TEMPERATURE (14-16°C)
AGEING: 6-8 MONTHS ON FINE LEES IN STEEL AND 1 MONTH IN
Molino di Sant’Antimo
Molino di Sant’Antimo consists of about 40 hectares of land with a south/south-west exposure, sloping from 250 to 200 metres above sea level down to the Orcia river. The soils have a composition of schist, galestro and crushed stone, rich in mineral salts. The vine plantations have developed gradually over the years. The vinification area contains modern steel vats for 1,000 Ql. The ageing area houses the large French Allier oak barrels and the French and American oak casks.
