Greco Numero Dieci Sassotondo :
this reserve wine is produced only in particularly favourable vintages. The late ripening of the grapes together with the typical characteristics of the vine, allows the persistence of characteristics of acidity and aroma suitable for the maceration project.
During the long maceration process, a long dialogue takes place between juice, wine and skins, with very noticeable changes in depth, texture and colour during the process. At the end the Greek wine, with its strong acid and tannic fibre, is further refined in barriques until the tannin is partially tamed.
“Ancient gold with amber glow and scents of quince, zabaglione, cinnamon and dried apricot. Tasty sip, full of savoury tongues, with traces of polyphenols. Closes on tones of aromatic herbs.”
About the producer, Sassotondo :
The wines of Sassotondo want to be an expression of their powerful and mysterious territory: the autochthonous grape varieties and an environment that is in some ways extreme, with tuff emerging everywhere, produce fine and elegant wines, naturally concentrated, savoury and spicy.
The 12 hectares of the farm are located between the towns of Sorano and Pitigliano. The area is considered altimetrically “hillside”, but it appears as a succession of high lands, interspersed with deep ravines dug into the tuff by inconstant watercourses.
The company falls in fact in the DOC Bianco di Pitigliano, Sovana and Maremma Toscana.
Sassotondo’s is an old underground cellar, completely dug into the tuff in a cliff of the farm land. In the last room, separated from the rest of the cellar by a long corridor (about 14 metres underground and 30 metres from the entrance) is the cooper, who enjoys ideal humidity and temperature conditions in a completely natural way.
