Ciliegiolo Maremma Toscana Sassotondo :
The Ciliegiolo Maremma Toscana Sassotondo comes from vineyards that derive from a massale selection of the oldest vineyards and were planted between 1995 and 2003.
They are all Guyot trained with a density that varies between 3,000 and 4,500 plants per hectare.
The grapes are harvested and selected by hand. Fermentation takes place without the addition of yeast and lasts between 15 and 20 days, including maceration. It matures for a few months in steel.
Clear ruby red color, of beautiful vivacity; the nose is intense and persistent with notes of mulberry and cherry, plum and a spicy touch of white pepper. The taste is dry, warm tending to soft thanks to the non-invasive tannins and a sustained and enveloping structure.

The wines of Sassotondo want to be an expression of their powerful and mysterious territory: the autochthonous grape varieties and an environment that is in some ways extreme, with tuff emerging everywhere, produce fine and elegant wines, naturally concentrated, savoury and spicy.
The 12 hectares of the farm are located between the towns of Sorano and Pitigliano. The area is considered altimetrically “hillside”, but it appears as a succession of high lands, interspersed with deep ravines dug into the tuff by inconstant watercourses.
The company falls in fact in the DOC Bianco di Pitigliano, Sovana and Maremma Toscana.
Sassotondo’s is an old underground cellar, completely dug into the tuff in a cliff of the farm land. In the last room, separated from the rest of the cellar by a long corridor (about 14 metres underground and 30 metres from the entrance) is the cooper, who enjoys ideal humidity and temperature conditions in a completely natural way.
