The Bianchetto is considered one of the finest truffles both for its organoleptic characteristics and for the scarcity of specimens that are found every year. It is for this reason that in ancient times it was considered a “magnate” food, that is to say rich people.
. The Bianchetto Truffle is cleaned, boiled and stored in its cooking water after harvesting. The procedure ensures the maximum yield of the truffle that preserves all its organoleptic characteristics.
In the glass jar, each Bianchetto Truffle is presented whole, in its cooking water, ready to be sliced or grated according to the chosen use.
Ways of Use
The intense, slightly cheesy and garlicy aroma of Bianchetto Truffle allows to give personality to dishes even using small quantities.
An idea for a refined and tasty dish: cook the simple tagliatelle, season with the flavored condiment with the white truffle flavor and, only after having dished, add the Bianchetto Truffle cut into slices.
We recommend storing and using truffle brine water.

The company Fabrizzi Simone is located in the beautiful village of Pienza, in the heart of the Val d’Orcia. The company was founded thanks to the passion of Fabrizzi Guerrino for the search for truffles that, since the ’60s, with his dog, was collecting precious tubers. As often happens, so much passion has been handed down to the son who, growing up, began to hunt truffles with his father. Since 2009, the company is led by his son, Fabrizzi Simone, who continues the family tradition by opening an artisan workshop to work and transform the fresh truffle into sauces and truffle oils.
