What is AcquaCotta Soup ? Tuscan Traditional Food
Acquacotta literally means cooked water. The origins of this soup are Etruscan, but more specifically its tradition can be traced to the Maremma area. A simple mix of fresh ingredients that has changed through the centuries but has always remained a synonym of simplicity. Its most common version is made using water, onions, tomatoes, extra virgin olive oil, celery, carrot, toasted homemade bread, grated pecorino cheese and eggs.

Le Macchie Alte is an organic farm of 420 hectares. Pigm. Cows, wild boars and the famous “Cinta Senese” pigs. Nestled deep in the rolling hills of the Tuscan Maremma area.
Extra virgin olive oil, honey, Maremma veal and cinta senese pigs, sauces, creams for croutons and jams, soups are the result of their work. The company philosophy is based on the idea that a healthy product is born from a healthy territory!
