The particular processing of the vineyards, performed exclusively by hand, the selection of the Sangiovese vines, the thinning of the grapes, the expectation of perfect ripening and the selection of the bunches, are the steps that allow to obtain concentrated musts of perfumes, color and of sugars that are fermented at a controlled temperature of 25 to 30 days to extract the best colors and aromas from the skins. Afterwards, the maturation in large oak and barrique barrels and the refining in the bottle allows to obtain high quality wines.
